CHEF Jamie Oliver has revealed the secret ingredient to his Christmas Day gravy – and it’s not what you might expect. 

But it’s very likely that you already have the cheap food item in your kitchen cupboard, making it easy to include in your recipe on the big day itself.

In a video posted to his Facebook page, Jamie, 48, revealed his top tips on making the ultimate roast – including the all-important gravy. 

The cook explained that the first step is to create a bed of vegetables that will act as the “basis” for the sauce.

Jamie placed around half a celery, one onion, two carrots, and a bulb of garlic that had been cut into big chunks into a pan, underneath the beef he was roasting – although any other joint of meat will work too.

He then added in some rosemary and bay leaves for extra flavour, before he explained: “All of this goes in.

“This is going to do two things – first of all, it soaks up all the juices from the beef and it creates the basis for the most incredible gravy.”

Once the meat had been cooked to perfection, Jamie then put it to one side for it to rest, as he turned his attention back to the gravy. 

The foodie explained: “Have a look in this tray.

“All of this love is going to be the basis of your gravy.” 

Jamie’s next step was to put the vegetables onto a high heat, and add a heaped tablespoon of flour to create a “nice, thick gravy.” 

Jamie continued: “Then just squeeze all of the beautiful garlic out of the skins and mush up the onions. 

“I’m going to use a little bit of red wine – a little half glass.”

As he complimented the smell as “absolutely amazing”, Jamie then dished out his number one trick.

He confessed: “The little secret ingredient that I love is just some beautiful jam.

“That little sweetness really helps the gravy sin really, really nicely.”

The final touch is to add a litre of stock, before bringing the liquid to the boil and simmer for approximately half an hour.

Once Jamie had revealed his gravy secret, his Facebook followers were quick to say that they’d be trying it out this festive season – with some already being converts.

One person wrote in the comment section: “Love your veggie gravy – yum!”

Another added: “Great recipe for Christmas.”
