Jamie Oliver's 30-minute carrot cake recipe is a delicious 'one pan wonder'

We all deserve to treat ourselves every now and again, and nothing quite beats a homemade cake. Carrot cake can be ridiculously easy to make as long as you have the right recipe, and thanks to Jamie Oliver, you could be sitting down with a fresh slice of delicious cake within half an hour if you follow his foolproof instructions.

Many cake recipes take ages to bake and require multiple pots and pans, but with this "rolled carrot cake" recipe, you only need 15 minutes to prepare the cake, 12 minutes to cook it, and one pan to throw all of the ingredients into.

Jamie shared the recipe in his One Pan Wonders cookbook - which can be bought for £13 from Amazon - and only requires a food processor and a baking tray to make. It's perfect for a quick weekend afternoon treat with a cup of tea.

Start by preheating the oven to 180C, before lighting oiling your baking tray and lining it with baking paper. Next, wash the carrots and snap them in half, placing them in a food processor and pulsing until they're finely chopped.

Add the brown sugar, flour, and eggs to the food processor, then grate in the lemon zest and add three tablespoons of olive oil. Blitz all the ingredients in the food processor until you have a smooth batter, and then pour the batter into the light baking tray and bake in the oven for 12 minutes.

As soon as the cake is cooked, turn it out onto a clean tea towel and peel off the baking paper. Then, use the tea towel to help roll the sponge up as it cools, as this will help form its rolled shape.

While the cake is cooling, snap half the white chocolate into a bowl and melt it in the microwave, before finely chopping the stem ginger balls and mixing them into the chocolate with the lime juice and the cream cheese. Once your cake is completely cooled, sprinkle it with the extra brown sugar and spread over the chocolate mixture.

To serve, place the cake on a serving board, brush the sponge with the stem ginger syrup and grate over the remaining white chocolate. Finally, cut yourself a slice and enjoy!
